Marinated Chickpea Salad

3 Tbsp lemon juice

2 Tbsp EVOO

1/4 tsp ground coriander

1/4 tsp black pepper

pinch each of salt and Cayenne pepper

1 can (540mL) chickpeas (drained and rinsed)

1 English cucumber, quartered lengthwise & sliced (remove center seeds)

1/3 cup diced red onion

1/4 cup chopped fresh cilantro or parsley (to be added when serving)


In a bowl, whisk together lemon juice, oil, coriander, pepper, cayenne pepper and salt.

Add chickpeas, cucumber and onion, stir to combine. (Make ahead: refrigerate up to 24 hours.) Stir in parsley or cilantro when ready to eat. At the ready for adding to any of your favourite greens.

I fill a bowl with chopped Romaine lettuce and top with a couple tablespoons of the chickpea mix. A favourite salad of mine.
