 This seems like a good day to make a meatloaf and creamy mashed potatoes with my easy gravy. This   favourite and EASY go-to meatloaf recipe is from a friend many years ago. 1 lb ground beef 1 egg 1 cup water 1 box of Stove Top Stuffing mix (I like the one for Turkey) In a large bowl mix all together, put in your loaf pan. Bake at 375F for approx. 50 minutes (check for doneness as ovens bake differently).    For my easy gravy .   In a sauce pan bring to a boil ... 1 cup of beef or chicken low-sodium broth. Add  1 to 2 Tbsp of BISTO Traditional Gravy mix (depending on desired thickness) whisking constantly.  Serve on your meatloaf/potatoes. YUM

 Celebrating our 15th Anniversary.  February 2023.  A great way to celebrate our special 15th Anniversary and 700th shawl with our friends, lunch & cake.

  Marinated Chickpea Salad 3 Tbsp lemon juice 2 Tbsp EVOO 1/4 tsp ground coriander 1/4 tsp black pepper pinch each of salt and Cayenne pepper 1 can (540mL) chickpeas (drained and rinsed) 1 English cucumber, quartered lengthwise & sliced (remove center seeds) 1/3 cup diced red onion 1/4 cup chopped fresh cilantro or parsley (to be added when serving) In a bowl, whisk together lemon juice, oil, coriander, pepper, cayenne pepper and salt. Add chickpeas, cucumber and onion, stir to combine. (Make ahead: refrigerate up to 24 hours.) Stir in parsley or cilantro when ready to eat. At the ready for adding to any of your favourite greens. I fill a bowl with chopped Romaine lettuce and top with a couple tablespoons of the chickpea mix. A favourite salad of mine.
